South INDIAN Masala Dosa

At first, We need to make the batter it’s very easy to make.

Ingredients – 2 cups regular rice, 2 cups Beaulieu’s daal.

Processing Wet these ingredients for 5 hours. Take this in a mixture grinder. Grind it well. And make a fine paste. but dont forget to add a spoon of baking soda or baking powder And then take it in a bowl and cover it with a plate or raper.

***The taste of dosa also depends on the rice used. normal, unpolished broken rice tastes 100% better than polished rice.you can also use brown rice instead. I like them crispy and porous.so I use to add 1 cup of oats and 1 1/2 cup of rice for 1 cup of a Black gram.

Ingredients Refined oil, mustard seed, curry leaves, green chili, chopped onion, finely chopped ginger, boiled potatoes, red chili powder, saltREFINE OIL

Processing – Take a frying pan..heat the pan. Add little oil.. When the oil heated add 1 teaspoon of a mustard seed ..once it’s dancing add 5/6 curry leaves in it add chopped ginger and onions. Just cook it for 3/4 minutes then add boiled potatoes also add salt, turmeric, and red chili powder. And Cook it for 5/6 minutes. Now your masala is ready.

How To Make South INDIAN Masala Dosa Tomato Chatney

Ingredients Split Bengal Gram /chana daal, tomatoes, onions, green chili, ginger, salt, muster seeds, curry leaves.. 

To making red dosa chutney..

Processing –   Take a frying pan. Add 1 tablespoon of oil, once it heated add tomatoes, ginger, onions, green chili, also add chana daal, mixed it well.. Then add 4/5 tablespoon of water in it. Just because of the chana daal.

Then cook it again 4/5 minutes in a low flame. Add 1/2 tablespoon of salt in it. Now turn off the gas flame You can also use INDUCTION COOKER. .and kept it for cooling.

Once it cool properly.. pour it in a mixture grinder. Grind it well. Now take a pan. heat some oil add little muster seed in it and also add some curry leaves. Once muster seeds dancing turn off the flame. Mixed this oil mixture with the red chutney. That’s it. Your red chutney is ready.

SPLIT BENGAL DAAL OR CHANNA DAAL

Now time to make coconut chatney Indian style 

How To Make South INDIAN Masala Dosa Coconut Chatney

Ingredients Fresh coconut, you can get any market and you can check online, peanut, muster seed, curry leaves, and salt as per your test.

Processing Take a mixing jar pour coconut, peanut salt in it. And also add 5/6 tablespoon of water in it. Grind it well. Keep aside it.

Now take a pan and heat medium flame and add some oil, add muster seeds once it’s dancing add some curry leaves in it. Then trun off the gas flame. And mix that oil mixtue with the coconut and peanut paste. That’s it your white chutney is ready.

Processing –  Now remove the plate of the batter which we prepared. Add a little bit of water and also add 1/2 teaspoon of salt into the paste.

Make sure that your paste should not be very thick and also not so runny. Now your batter is completely ready. Take a flat and a thin pan. (Like this) Because dosa mostly comes very thick and this type of pan very easy to make like this, Heat the pan once it heated add 2/4 tablespoon of water then soaked the water with a piece of cotton cloth.

Then pour the batter into the pan and spread it well. Cook it for 2 /3 minutes. Once you see golden edges. That’s when you will place potato mixture and roll it carefully. Now your masala dosa is ready to serve.
